Italian Filled Pork Scallops
Ingredients: 2 pork scallops, pesto, 1 grilled pepper, mozzarella, salt, pepper,

Try to get 2 pork scallops as flat as possible. Grease 1 side of the escalope with green pesto. Cut 1 grilled red pepper in half. Put a half grilled pepper on each pork scallop. Put pieces of mozzarella on it. Fold the pork scallops and bind it with kitchen string. Season the pork scallops with salt and pepper. Bake the pork scallops brown on both sides and let the pork scallops be wel cooked om lower heat. Serve with potatoes and a salad. Enjoy!
