RECIPE

1) Mix kiwis with 2 tbsp sugar so as to get 400 gr puree

2) Whip 500 mL cream

3) Soak 2 gelatin sheets (4gr) in cold water

4) Heat 1/3 of the puree, add the gelatin (drained), mix till well blended and incorporate to the remaining puree

5) Gently mix kiwi gelatin puree and whipped cream till well incorporated

6) Arrange lady fingers biscuits on the edges of a 18 cm charlotte tin (based with plastic film

7) Pour in the kiwi cream

8) Smooth the surface, cover with some biscuits and cover the tin with some plastic film

9) Let chill overnight
