My new favorite breakfast, I could eat it every morning and never get sick of it. This is simply delicious granola… great in vanilla yogurt or just by itself. A great, healthy snack too! Try adding some dried fruit for variety. Mmmmm…
Recipe from Mom, (hi mom!) who got it from a charming little bed and breakfast in Ridgway, Colorado. I like using slivered almonds and walnuts in mine, but mix it up with whatever nuts you like best.
Chipeta Granola
INGREDIENTS
8 cups oatmeal
2 cups sunflower seeds
2 cups grated coconut
2 cups cashews (or other nuts)
1 1/2 cup honey
1/2 cup canola oil
1 Tbs vanillaDIRECTIONS
Preheat oven to 325ËšF.Combine honey, oil, and vanilla in a 2-cup Pyrex measuring cup. Microwave mixture until hot and bubbling. Place all dry ingredients in a large mixing bowl. Pour the honey mixture over and stir until well mixed.
Spread granola on two cookie sheets. Bake for 30 minutes, stirring carefully every 15 minutes as granola will brown on the sides and the bottom. Cook for an additional 10 minutes. Let cool.
(Tip: when granola is cooling, be sure to constantly stir/break it up, or you’ll end up with a granola bar instead of granola).
