Flourless Chocolate Cake with Toasted Hazelnuts

This cake was quite delicious. We forgoed the brandied cherries (who plans a week ahead? seriously) but even without them it was excellent. Not too rich. I turned it into a dairy-free cake by substituting margarine and soy creamer for the butter and heavy cream.

Flourless Chocolate Cake with Toasted Hazelnuts

INGREDIENTS
Cake
10 ounces bittersweet or semisweet chocolate, chopped
1 1/4 cups (2 1/2 sticks) unsalted butter, diced
10 large egg yolks
1/2 cup plus 6 tablespoons sugar
2 teaspoons vanilla extract
1/4 teaspoon salt
9 large egg whites

Ganache
8 ounces bittersweet or semisweet chocolate, chopped
1 cup heavy whipping cream
1 1/2 cups hazelnuts, toasted, coarsely chopped

DIRECTIONS
For cake:
Position rack in center of oven and preheat to 350°F. Butter 10-inch-diameter springform pan with 23/4-inch-high sides. Line bottom of pan with parchment paper round. Place chocolate and 1 1/4 cups butter in medium metal bowl. Set bowl over saucepan of simmering water; stir until mixture is melted and smooth. Remove bowl from over water; cool to lukewarm, about 10 minutes.

Using electric mixer, beat egg yolks and 1/2 cup sugar in large bowl until very thick and pale yellow in color, about 5 minutes. Beat in vanilla and salt. Gently fold chocolate mixture into yolk mixture. Using clean dry beaters, beat egg whites and remaining 6 tablespoons sugar in another large bowl until peaks form. Fold 1/3 of beaten whites into chocolate mixture. Fold in remaining whites in 2 additions. Transfer batter to prepared pan.

Bake cake until tester inserted into center comes out with moist crumbs attached, about 45 minutes (cake will be puffed and soufflé-like while baking). Cool cake in pan on rack 15 minutes (cake will fall in center). Run knife around cake sides to loosen; press edge of cake down to make level with center. Remove pan sides and cool cake completely. DO AHEAD Can be made 1 day ahead. Cover and store at room temperature.

For ganache:
Combine chocolate and cream in medium metal bowl. Set bowl over saucepan of simmering water and stir until chocolate is melted and mixture is smooth. Remove bowl from over water; let stand until ganache cools slightly but is still pourable, about 5 minutes.

Place cooled cake on rack set over rimmed baking sheet. Pour 1/2 cup ganache over top of cake. Using offset spatula, quickly spread ganache over top and sides of cake. Freeze cake 3 minutes. Pour remaining ganache over top of cake. Working quickly but gently and grasping pan bottom and rack together, slightly tilt rack with cake from side to side, allowing ganache to flow evenly over top and down sides of cake; smooth sides with offset spatula. Press hazelnuts onto sides of cake to adhere. Chill cake until ganache is set, about 1 hour. DO AHEAD Can be made 1 day ahead. Cover with cake dome and keep refrigerated. Let stand at room temperature 45 minutes before serving.

Pork Chops with Toasted Spice Rub and Apple Dressing

Taylor sure got a treat this week: steak and pork in the same week. Very unusual in our kitchen. Maybe because I’ve always been biased against pork, and steak (at least the good pieces) are too expensive to eat on a regular basis. This is the reason you’ll always see more lentils and tofu on our plates than meat. That is, except for this week.

Taylor’s verdict: this is good. I shall not sway your opinion of this one way or another by saying what I thought of it. If you like pork, this is a great fall dish that’ll have your kitchen smelling delicious for the next few hours.

Pork Chops with Toasted Spice Rub and Apple Dressing

Makes 4 servings. Recipe from Michael Chiarello.

INGREDIENTS
For Honey Roasted Apple Sauce:
12 apples, Gravenstein or McIntosh
2 tablespoons butter
2 tablespoons fresh lemon juice
1/2 teaspoon finely ground sea salt, preferably gray salt
1/3 cup honey

For Spice Rub:
1/4 cup fennel seeds
1 tablespoon coriander seeds
1 tablespoon peppercorns
1 teaspoon crushed red pepper flakes
1/4 cup pure California chili powder
2 tablespoons kosher salt
2 tablespoons ground cinnamon

4 (12-ounce) center-cut pork chops
Gray salt
2 tablespoons Toasted Spice Rub, recipe follows
2 tablespoons extra-virgin olive oil
1/3 cup dry white wine
1/2 cup Honey Roasted Apple Sauce, recipe follows

DIRECTIONS
Make apple sauce: Preheat oven to 425 degrees F.

Peel the apples with a vegetable peeler, remove the core and cut into 1-inch chunks, place in a large bowl. Heat a large skillet or roasting pan over medium-high heat. Add the butter. When the butter begins to brown, add lemon juice, then add the apples and salt. Cook until the apples just begin to color, about 4 minutes. Stir in the honey. Roast the apples in the oven until soft and lightly caramelized, about 12 minutes. Fork mash for a chunky version or puree in food processor for a smoother sauce. Set aside.

Make spice rub: Toast the fennel seeds, coriander seeds, and peppercorns in a small, heavy pan over medium heat. When the fennel begins to turn light brown, add the red pepper flakes, and toss several times. Immediately turn the spice mixture out onto a plate to cool.

Put in a blender with the chili powder, salt, and cinnamon and blend until the spices are evenly ground. If you have a small spice mill or a coffee grinder dedicated to grinding spices, grind only the fennel, coriander, pepper, and chili flakes. Pour into a bowl and toss with the remaining ingredients. Keep the spice mix in a glass jar in a cool, dry place, or freeze.

Note: If you have an exhaust fan over your stove, turn it on before you start toasting the spices. Be careful not to inhale the fumes once you add the red pepper flakes.

Preheat the oven to 350 degrees F.

Season both sides of the pork chops with salt and toasted spice rub.

Heat the oil in an ovenproof skillet over medium heat and sear the pork chops until golden brown, about 4 minutes on 1side and 1 minute on the other side. Place pork chops on baking sheet. Remove excess oil from skillet.

Bake the chops until just cooked through, about 8 to 10 minutes. Remove to a serving platter.

Over medium heat, add the wine to the skillet, stir, and reduce to 1 to 2 tablespoons; add the apple sauce and bring to a simmer. Spoon over each chop.

Toasted Tomato, Basil, and Goat Cheese Sandwiches

Another perfect summer meal. Full of fresh and bright flavors. This is one of those meals that is so incredibly simple to make, and yet when you’re eating it you feel like a true gourmet. We sliced up the rest of our heirloom tomatoes, using a combination of orange and green zebra tomatoes. With some goat cheese, fresh herbs (we used basil and tarragon), and tart kalamata olives, well, it’s 10am on Sunday morning and I’m craving a repeat.

The recipe calls for grilling the bread, but for us grill-less folk, it works fine toasted in a sauté pan. this is also a great use for the No-Knead Bread we love so much.

Toasted Tomato, Basil, and Goat Cheese Sandwiches

Makes 4 servings. Recipe adapted from Epicurious.

INGREDIENTS
6-8 slices crusty bread
1/2 cup olive oil
5 large garlic cloves, finely chopped
1/4 cup chopped fresh basil
1 tablespoon chopped mixed fresh herbs (such as tarragon, thyme, and rosemary)

3/4 cup soft fresh goat cheese (plain, peppered, or herbed)
1 large heirloom tomato, thinly sliced into rounds
1/2 cup coarsely chopped pitted Kalamata olives

DIRECTIONS
Preheat barbecue or a large sauté pan (medium heat). Combine oil, garlic, and herbs in small bowl. Brush top sides of bread with half of oil mixture.

Toast bread, oiled sides down, until lightly toasted, about 1-3 minutes, until crisp. Remove from heat. Quickly spread toasted sides with goat cheese.

Return to pan. Cook until bottom sides are toasted and the cheese begins to melt, about 3 minutes. Top with tomatoes, olives, and drizzle with remaining herb oil mixture.
