Filled Pork Scallops with Tomato Sauce
Ingredients: 3 pork scallops, tomato tapenade, mozzarella, salt, pepper, 6 slices raw ham, 50 grams diced bacon, 1 onion, thyme, oregano, 5 tomatoes, 100 ml red wine, 1 tablespoon pesto ,

Preheat the oven at 170 degrees. Cover 3 thin pork scallops with tomato tapenade and put mozzarella on. Roll the pork scallops and season with salt and pepper. Wrap each pork scallop rolls into 2 slices raw ham. Bake the rolls brown in hot butter. Put the rolls into an oveproof dish.

Bake in the remaining oil 50 grams diced bacon with 1 finely chopped onion, thyme and oregano until the onion is soft. Add 5 diced tomatoes and stir fry briefly. Add 100 ml red wine and 1 tablespoon pesto. Bring it to the boil so that the alcohol evaporates.

Add the tomato sauce with the pork scallops rolls in the ovenproof dish. Place the ovenproof dish about 30 minutes in the preheated oven. Serve it with potatoes and a salad. Enjoy!

Preheat the oven to 175 degrees. Mix 1 grated carrot with 1 small onion, 1 egg, 25 grams flour and dill to taste. Heat oil in a frying pan and bake the blini’s brown at both sides. Place the blini’s on a baking tray. Sprinkle grated cheese over the carrot blini’s and place the baking tray about 10 minutes in the preheated oven.

Ingredients: 2 pork scallops, salt, pepper, nutmeg, 1 onion, 250 grams chestnut mushrooms, 100 ml white wine, 200 ml cream,

Cut 2 pork scallops in slices and season with salt, pepper and nutmeg. Cook the pork scallops slices brown in hot oil. Shovel the pork scallop slices from the pan and stir fry in the remaining fat 1 finely chopped onion with 250 grams sliced chestnut mushrooms for about 3 minutes. Add 100 ml white wine and let the alcohol evaporate. A 200 ml cream and bring to the boil. Add the pork scallops and let it simmer on low heat for about 10 minutes.

Serve the carrot blini’s and Swiss pork scallops with baked potatoes. Enjoy!

Cook the spaghetti in boiling water al dente with a little salt. Cut 1 pork scallop in strips and season with salt and pepper. Cook the pork scallop strips around brown in hot oil. Add 1 chopped leek and 200 grams sliced mushrooms. Stir fry until the mushrooms have softened. Add 150 ml stock and 1 teaspoon mustard. Bring all to boil. Lower the heat, add 100 ml cream, and let it all simmer for about 10 minutes. Serve with spaghetti. Enjoy!

Preheat the oven at 160 degrees. Cut 4 pork scallops in piece. Season with salt and pepper. Get it through 2 beaten eggs and then by breadcrumbs seasoned with oregano. Bake the pork scallop pieces brown in hot butter and put in an ovenproof dish. Place the ovenproof dish in the preheated oven. Meanwhile make the tomato sauce. Bake in hot oil 1 chopped onion with 1 finely chopped garlic clove and thyme until the onion is soft. Add 50 ml red wine and let the alcohol evaporate. Add 3 diced tomatoes and 1 tin diced tomatoes again. Stir in 1 tablespoon sugar and let it simmer gently for about 10 minutes. Remove the ovenproof dish from the oven and put the tomato sauce over the pork scallops. Scatter pieces mozzarella and grated cheese over it. Place the ovenproof dish back in the oven so the cheese and mozzarella can melt. Serve with baked potatoes and a salad. Enjoy!

Flatten 2 pork scallops. Sprinkle with salt, pepper and chopped basil to taste. Then put pieces of mozzarella and small pieces of 1 grilled red pepper. Roll or fold the pork scallops. Enfold each pork scallop roll with 2 slices bacon. Tie with kitchen string the pork scallops to fixed. Place the pork scallops rolls in an ovenproof dish. Turn the ovenproof dish about 25 minutes in the preheated oven. Serve with baked potatoes and a salad. Enjoy!

Boil the rice according to the instructions on the package. Bake in hot oil 1 shredded onion with paprika to taste until the onion is glassy. Add 2 pork scallops cut in slices and stir fry until the pork scallops are brown. Then add 200 grams sliced mushrooms and stir fry until the mushrooms have softened. Add 3 tablespoons sweet chilli sauce, 100 ml cream and chives to taste and heat well. Serve with rice. Enjoy!

Pan-Seared Scallops on Red Onion Marmalade

Another special treat, but quick at the same time. Taylor wasn’t a fan of the lemon/ginger combination on the scallops, and thought garlic would work better. We both agreed, however, that the marmalade was fabulous and gave the dish great flavor. Pretty too. :)

INGREDIENTS
16 large sea scallops (about 1 3/4 lbs)
5 tablespoons olive oil, divided
1 tablespoon grated lemon peel
1 tablespoon minced peeled fresh ginger
3 medium red onions, thinly sliced
1/3 cup dry red wine
1/4 cup red wine vinegar
2 tablespoons golden brown sugar
chopped fresh chives

DIRECTIONS
Preheat oven to 250 degrees F. Toss scallops, 2 tablespoons oil, lemon peel, and ginger in medium bowl. Heat large nonstick skillet over medium-high heat. Add scallops; sprinkle with salt and pepper. Cook until brown and opaque in center, about 3 minutes per side. Transfer scallops to small baking sheet; place in oven to keep warm.

Add 3 tablespoons oil to drippings in same skillet; place over high heat. Add onions; sprinkle with salt and pepper. Cover and cook until brown, stirring occasionally, about 10 minutes. Add wine, vinegar, and sugar. Cook until onion marmalade is thick, stirring often, about 2 minutes. Season with salt and pepper. Spoon marmalade onto plates. Top with scallops and any juices, then chives

Scallops with Asparagus and Shiitake Mushrooms

So we’ve had some iffy recipes in the past few weeks. This one makes up for all of those. One of the best things we’ve eating in a while! The mushrooms practically melted in your mouth. Mmmmm! We will definitely be making this one again.

Taylor wants me to remind you to be sure to pat the scallops dry before sautéing them. They won’t brown if they’re watery. This is especially important if you use frozen scallops (like we did).

We didn’t know what hon-dashi was, or where to get it. I don’t know what it could have added to this dish to make it any better, as it was delicious without it.
Recipe from Epicurious. Makes 2 servings.

INGREDIENTS
6 fresh asparagus spears, cut diagonally into 1 1/2-inch pieces
4 tablespoons (1/2 stick) butter
6 fresh shiitake mushrooms, stemmed, caps sliced
1 tablespoon minced garlic
2 tablespoons grated onion
1/4 cup soy sauce
3 tablespoons sake
1 teaspoon hon-dashi, Japanese bonito-type soup stock granules, is sold at Asian markets.
Pinch of cayenne pepper
10 sea scallops

DIRECTIONS
Cook asparagus in medium saucepan of boiling salted water 1 minute. Drain.

Melt 2 tablespoons butter in heavy large skillet over medium heat. Add mushrooms and garlic; sauté until mushrooms are tender, about 5 minutes. Add onion; stir 1 minute. Add soy sauce, sake, hon-dashi and cayenne; simmer until sauce thickens slightly, about 3 minutes. Remove pan from heat.

Melt remaining 2 tablespoons butter in heavy medium skillet over high heat. Season scallops with salt and pepper. Add scallops to skillet and sauté until almost cooked through, about 3 minutes. Add asparagus and toss until heated through, about 1 minute. Add sauce and simmer 1 minute.

Divide between 2 plates and serve.

Peanut Curry Noodles with Seared Shrimp & Scallops

In my obsession with all things pumpkin, I found this recipe. When we went to make it, however, we made an executive decision to leave the pumpkin out. We felt there were TOO many things going on in this recipe, and decided that simplifying it would be in our best interests.

The results were delicious. A yummy peanut sauce and perfectly spiced seafood were a delicious combination. The pumpkin was not missed at all. We also added some coconut milk to the sauce to thin it out a bit, and a bit of sesame oil for some toasted flavor. If you’re not a big seafood fan this same noodle/sauce combination would be great with chicken or beef, or plain by itself. Delicious.

Peanut Curry Noodles with Seared Shrimp & Scallops

Makes 4 servings. Recipe from Rachel Ray, with modifications.

INGREDIENTS
1 package noodles (we used the refrigerated kind found by the wonton wrappers)

5 tablespoons vegetable oil or peanut oil
3 cloves garlic, finely chopped
2 inches ginger root, minced or grated
1 red bell pepper, thinly sliced
1/2 teaspoon crushed red pepper flakes
1/4 cup creamy peanut butter
1/4 to 1/3 cup tamari dark soy sauce
2 rounded tablespoonfuls red curry paste
2 teaspoons sesame oil
1/2 cup light coconut milk
2 tablespoons brown sugar

1 tablespoons five-spice powder
12 jumbo shrimp, peeled and deveined
12 diver scallops, trimmed and patted dry
4 scallions, cut into 2-inch pieces, then thinly sliced lengthwise into matchsticks
1/4 cup coarsely chopped cilantro

DIRECTIONS
Heat a large pot of water for noodles. When water boils, add noodles and cook according to package directions.

While noodles cook, heat a large, deep skillet over medium heat with 2 tablespoons vegetable or peanut oil. Add garlic, ginger, red bell pepper, and pepper flakes to the pan and cook together a couple of minutes, then add peanut butter and melt it. Whisk soy into peanut butter, then stir in curry paste. Turn down the heat to low. Add sesame oil, coconut milk, and brown sugar and stir until combined. Adjust seasoning as necessary (you probably won’t need salt, but taste just in case).

Heat a small to medium skillet over high heat. Rub seafood with spice powder. Add 3 tablespoons of remaining oil to hot skillet. Place the shrimp in the pan and cook 1 minute, flip and sear the other side until just opaque. Remove shrimp to a plate and set aside. Add another 3 tablespoons of oil to the skillet and heat back up to smoking. Add the scallops and sear on both sides until opaque. Remove scallops and add to the plate of shrimp.

Drain noodles and return to pot. Add the sauce and toss thoroughly. Serve noodles on plates and top with scallions, cilantro, and seafood.
